3 eggs
3 dl sugar
3 dl flour
1 1/2 tea spoon of baking powder
3/4 dl boiling water
1 dl apple, pineapple or similar juice
jam, bananas, other fruit
Grease and dust cake pan (one of the non-stick ones that comes apart) with bread crumbs. Mix flour and baking powder. Whip eggs and sugar until a firm foam, add boiling water and the flour-baking powder mix. Bake in a 175C (350F) oven for 30-45 minutes, or until it begins to brown and separate from the pan. Flip the pan over and store the cake so at room temperature until ready to decorate.
For decorating, use a long knife to cut the cake in half. Moisten the halves from the inside out with the juice -- Cruzan orange and mango rum actually work really well in addition to the juice. Fill with jam, fruits, whipped cream, etc. Reassemble, and decorate with more fruit, gelatin, whipped cream as desired.
